WHITE SWEET CORN
Cooking Methods
Stovetop: Remove corn husks, silks and wash. Bring water to roaring boil. Immerse
sweet corn and turn burner off. Leave corn and rotate to cook for 2 to 4 minutes.
Microwave: Remove corn husks, silks and wash. Place in microwave covered with microwave
cover or damp paper towel. Cook for 1 to 3 minutes on each side, depending on microwave.
Grill: Remove outer corn husks (leaving husk on the corn) and silks. Immerse corn in water
for a few minutes. Place on grill and rotate to cook 15 to 20 minutes depending on heat of grill.
Schwebach Corn Sauté
6 - 8 medium red potatoes
2 cups white sweet corn
2 green zucchini
2 gold zucchini (yellow straight or crook neck can be substituted)
1/2 Package of thick sliced bacon
Green chili to taste
Salt and Pepper to taste
Slice bacon into one inch pieces and cook until crisp. Drain excess bacon grease,
remove and set bacon aside and add cubed potatoes. When potatoes are almost soft,
add sliced squash, corn and green chili. Sauté until squash is soft. Add bacon back.
Salt and pepper to taste.
