1 medium onion, chopped
Garlic to taste, diced cloves or garlic powder
4 cups of pinto beans, cooked
8 large purple viking potatoes, diced
Salt & Pepper, to taste
Oregano, to taste
Sour Cream (optional)
Brown ground beef, add onion garlic and cook until onions are translucent.
Combine cooked ground beef, pinto beans and diced potatoes. Cook until potatoes are tender.
Season with salt, pepper, more garlic and oregano. Simmer for an additional 30 minutes. Serve with warm tortillas and sour cream. Enjoy!
